Pork Aad Mass/Bone Meat | Goan Food Recipes | Aad Maas (Pork Bone Curry)





 PORK AAD MASS (GOAN RECIPE ) /PORK ARD MASS
1 kg pork Ribs /Pork bones

For the masala
Grind to a fine paste the following ingredients:

7-8 cloves 

2 cardamoms
2 big pieces of cinnamon
6-7 flakes of garlic
1 tsp cumin ,
1 inch piece of ginger
1 tsp pepper
1 inch piece of turmeric
1 ball tamarind 
1 onion
3-4 red chilies
Method
Mix all the masala with the pork bones and marinate for 1 hour. Add the onions
and the tamarind and keep on the fire. Cook for an hour on slow fire.

Chicken Cafreal( Goan delicacy)
Chicken 1 kg,
green chilly 4,
ginger 1 inch,
garlic 4 seeds,
coriander leave one handfull,
jeera 1 teaspoon,
cloves 4,
cinnamon stick 1 inch,
cardamom 2 ,
lemon 1,
Oil 3 table spoon,
turmeric powder 1 teaspoon ,(dash of white rum 2 table spoon optional)
Pepper seeds 10 -12,
vinegar 2 table spoon
Method
1cut the chicken with medium pieces,marinate with one lemon,little salt,turmeric powder half of recommended quantity, rub nicely on chicken, keep aside for 30minutes.
2. Grind to fine paste with all green chilly,ginger,garlic,coriander leaves,jeera,pepper,above mentioned Garam masala, vinegar, turmeric powder, salt without adding water
3.apply masala paste to chicken and keep aside in fridge 4 to 6 hours,over night marination is preferable
4. Take thick bottom pan , add oil when oil heat add marinated chicken keep it medium flame for 5 minutes then with low flame let it cook , turn chicken pieces occasionally,adjust the salt and vinegar,when it's almost done add dash of white rum (this is optional, you can skip this step )
